Azerbaijan: food safety
Food-safety rules are the same everywhere, but local conditions — hot summers, open markets, village produce, large gatherings — add their own twists. This chapter applies the rules to life in Azerbaijan.

01Short answer
02Simple explanation
Clean hands and a clean kitchen come first.
Keep raw and cooked apart and cook meat thoroughly.
Chill quickly — especially in summer heat.
03Scientific explanation
The five keys: the WHO manual “Five Keys to Safer Food” sets out these five core rules to prevent food-borne illness.
During cancer treatment: FoodSafety.gov advises people with cancer to avoid raw meat, raw eggs, unpasteurised milk, soft farm cheeses and raw sprouts.
04What happens in the body?
Market and shop
Buy meat and dairy where there is refrigeration; check that packaging is intact and in date. Pick up chilled items last and get them home quickly.
In the kitchen
Use a separate board and knife for raw meat, then wash with hot soapy water. Do not wash raw chicken — splashes spread germs.

Storage
Keep the fridge below 5 °C. Raw meat goes on the bottom shelf in a covered container. Store cooked food covered and eat it within 1–2 days.
